Crispy Shrimp with Sweet Chili Sauce
🥘 Ingredients
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 cup buttermilk
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup all-purpose flour
1 cup cornstarch
Salt & pepper, to taste
Oil for frying
For the Sweet Chili Sauce (or use store-bought):
½ cup rice vinegar
½ cup sugar
¼ cup water
2 tbsp fish sauce (or soy sauce)
1 tbsp cornstarch + 2 tbsp water (slurry)
1 tbsp minced garlic
1–2 tsp red chili flakes (adjust spice level)
🔥 Instructions
1️⃣ Marinate the Shrimp
In a bowl, mix buttermilk, garlic powder, onion powder, paprika, salt & pepper.
Add shrimp, coat well, and marinate 15–20 minutes.
2️⃣ Make the Coating
In a separate bowl, combine flour + cornstarch.
Remove shrimp from marinade, dredge in flour mixture, pressing lightly for extra crispiness.
3️⃣ Fry the Shrimp
Heat oil in a deep pan (350°F / 175°C).
Fry shrimp in batches until golden brown (about 2–3 minutes per side).
Drain on paper towels.
4️⃣ Make the Sweet Chili Sauce
In a saucepan, combine vinegar, sugar, water, garlic, and chili flakes. Bring to a simmer.
Stir in fish sauce (or soy sauce).
Add cornstarch slurry and simmer until thickened.
Let cool slightly before serving.
5️⃣ Serve
Toss crispy shrimp in sweet chili sauce or serve it on the side for dipping.
