Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce 🌶🥭
📝 Ingredients
For the Bowls:
1 lb large shrimp, peeled & deveined 🍤
1–2 ripe avocados, sliced 🥑
1 large ripe mango, diced 🥭
2 cups cooked rice or quinoa 🍚
For the Mango Salsa:
1 cup diced mango 🥭
1/4 cup red onion, finely diced 🧅
1/4 cup red bell pepper, diced 🫑
1 tbsp fresh cilantro, chopped 🌿
Juice of 1 lime 🍋
Salt, to taste 🧂
For the Lime-Chili Sauce:
3 tbsp olive oil 🌿
Juice of 2 limes 🍋
1 tbsp honey or agave 🍯
1 clove garlic, minced 🧄
1/2–1 tsp chili flakes (adjust to heat preference) 🌶
Salt & pepper, to taste 🧂
👨🍳 Instructions
1️⃣ Prepare the Shrimp
Season shrimp with salt, pepper, and a pinch of chili flakes.
Heat 1 tbsp olive oil in a skillet over medium-high heat.
Cook shrimp for 1–2 minutes per side until pink and slightly charred. Remove from heat.
2️⃣ Make the Mango Salsa
In a bowl, mix mango, red onion, bell pepper, cilantro, lime juice, and salt.
Toss well and chill until ready to serve.
3️⃣ Whisk the Lime-Chili Sauce
In a small bowl, whisk together olive oil, lime juice, honey, garlic, chili flakes, salt, and pepper.
4️⃣ Assemble the Bowls
Divide rice or quinoa into bowls.
Top with shrimp, avocado slices, and mango salsa.
Drizzle generously with lime-chili sauce.
5️⃣ Serve & Enjoy
Garnish with extra cilantro or lime wedges.
